'The Art of Millinery'

 Afternoon Tea at The Westbury

One of five milliners selected to create a millinery piece to be displayed at Dublin's Westbury Hotel in conjunction with a special afternoon tea that was available for a limited period. 

Ray Encarnacion, executive pastry chef at The Westbury, created desserts based on each design. This piece inspired a coconut clotted cream dessert dressed with lime and Bacardi gel and pineapple.
